Ingredients:

120 grams almond flour
200 grams powdered (confectioners) sugar
1/2 teaspoon instant espresso powder
90 grams egg whites (about 3 large eggs), room temperature
50 grams granulated sugar
pinch of salt
1/4 teaspoon cream of tartar

For the filling:
1/2 cup mascarpone cheese
1/4 cup heavy cream
2 tablespoons granulated sugar
pinch of vanilla powder (or 1/4 teaspoon vanilla extract)

Honey Lavender Buttercream

3 sticks (340 grams) unsalted butter, at room temperature
1 pound (453 grams) powdered sugar
1/16 teaspoon lavender oil
3 teaspoons honey
food colouring to your desired colour (optional)

1 cup (100gr) almond flour
1 cup (130gr) powdered sugar
2 large egg whites (about 80gr)
¼ teaspoon cream of tartar
¼ cup (55gr) sugar
1 teaspoon lemon zest
½ teaspoon pure vanilla extract
½ teaspoon lemon juice
Yellow gel food coloring

For lemon buttercream
3 tablespoons (40gr) unsalted butter, softened
1 cup (130gr) powdered sugar
2 teaspoons heavy cream
1 tablespoon lemon juice
1 teapsoon lemon zest
½ teaspoon pure vanilla extract
1/8 teaspoon salt

Ingredients:

macaron batter:
1 cup (100 gr) powdered sugar
3/4 cup almond meal (about 3 ounces or 75 grams)
2 tablespoons instant espresso
more instant espresso for macaron shell topping (optional)
2 large egg whites, at room temperature
5 tablespoons (65 gr) granulated sugar

filling:
1 jar of nutella (you won’t need the whole jar! just enough)

MARSHMALLOW FROSTING

2/3 cups dark chocolate
1 tablespoons plus 1 teaspoon heavy cream
4 tablespoons powdered sugar, sifted
4-5 tablespoons water, warm
