I was bored with the same old shopping trips this week.  I decided to give myself a challenge.  If I was just starting my coupon adventures, had no stockpile, how little could I spend on Christmas dinner and brunch for my family of four?  I decided to set a goal of $20.  (Pretty generous for avid couponers, pretty low for newbies) I am usually a “make it from scratch” kind of girl, so I felt kind of bad buying pre-made pie, whipped cream, potatoes, and rolls.  But, you know what?  I feel kind of happy that I won’t be in the kitchen all day for two days!  The only stockpile items I used were butter, mustard and salt (which I figure most people have)  Here is how I did:

Ham and Cheese Omelet Roll (recipe below)

Hot Cocoa with Whipped Cream

Recipe for Ham and Cheese Omelet Roll

1/4 tsp salt
12 eggs
8 oz ham, finely chopped (1 1/2 cups)
8 oz cheddar or Swiss cheese, shredded
2.5 Tbls Dijon mustard

1. In Large bowl, whisk your eggs and add the salt. Add ½ c of cheese; mix well.

3. Cut an 18 inch long piece of parchment paper. Press into bottom and up sides of jelly roll pan (with edges) To prevent egg mixture from running under parchment paper, pinch corners. Pour egg mixture into pan. Bake 28-33 minutes or until omelet is puffy and golden.

4. Meanwhile, finely chop your ham.

5. Remove omelet from oven. Spread with Dijon mustard. Sprinkle with about 3/4 of the remaining cheese. Add the ham. Starting at one short side, roll up jelly-roll fashion, removing parchment paper as you roll. Garnish top with remaining cheese. Let stand 5 minutes to allow cheese to melt. Slice roll into 8 slices using a serrated knife.

Makes 8 servings.
