1. Fried pickles

Ingredients:

oil for frying (vegetable or peanut)
½ cup all-purpose flour
1 teaspoon Italian seasoning (Greek seasoning or your favorite seasoning medley may be substituted)
1½ teaspoons garlic powder
¼ teaspoon salt
¼ teaspoon black pepper
1 tablespoon hot sauce
½ cup water
16 ounces dill pickle slices, drained and dried on paper towels

2. Stuffed Red Chili Pickle

Stuffed Red Chili Pickle

Ingredients:

Red chili – 3 kg
Salt – 220 gm
Saunf – 80 gm (coarsely ground)
Methi – 125 gm (coarsely ground)
Red chilli powder – 100 gm
Turmeric powder – 100 gm
Mustard seeds – 100 gm (coarsely ground)
Kalaungi – 40gm
Amchoor powder – 400 gm
Oil – 1 lt

Green Chili Pickle

Ingredients:

Green Chili – 1/2 kg (split each chili vertically)
Salt – 2 tsp + 2 tsp
Lemon juice – 2 tbsp
Turmeric powder – 1 tsp + 2 tsp
Mustard seeds – 2 tsp
Methi dana – 2 tsp
Saunf – 3 tsp
Red chili powder – 1 tsp
Mustard oil – 2 cup

5. Crunchy Dill Pickle

Crunchy Dill Pickle

Ingredients:

lbs of 3-4 inch pickling cucumbers
2 gals water
1 1/4 cups canning or pickling salt
1 1/2 qts vinegar (5 percent)
1/4 cup sugar
2 quarts water
2 T whole mixed pickling spice
whole mustard seed (2 tsp to 1 tsp per pint jar)
fresh dill (1 1/2 heads per pint jar) or 4 1/2 T dill seed (1 1/2 tsp per pint jar)
