Ingredients:

2 large or 4 small sardines (325g), scaled and gutted (ask your fishmonger to do this)
1 orange or lemon, sliced
2–3 bay leaves
20g (4 tsp) Flora pro.activ Olive
1 clove garlic, finely chopped
Zest half lemon
1 tbsp fresh parsley, chopped
Cracked black pepper to finish

Stuffed Sardines with Fresh Herbs, Tomato and Pine Nuts

Ingredients:

1 Handful of Fresh Basil
1 Handful of Fresh Parsley
1 Handful of Toasted pine nuts
2 tomatoes
1/2 pickled lemon in oil
1 clove of garlic
Thyme, salt, pepper

Fennel-Sardine Spaghetti

Ingredients:

8 ounces uncooked spaghetti
1 medium fennel bulb (about 8 ounces)
2 tablespoons olive oil
1 cup prechopped onion
3 garlic cloves, chopped
1 cup tomato sauce
1 teaspoon dried oregano
1/8 teaspoon crushed red pepper
1 (15-ounce) can sardines in tomato sauce, undrained

2 cups flour
4 eggs, beaten
4 cups panko breadcrumbs
½ tsp pepper

1 green or red chilli (10g), sliced
2 medium-sized onions (150g), peeled and sliced
1 clove of garlic, sliced
15g ginger, finely grated

1 sprig of parsley
