Oatmeal Cinnamon Chip Cookies

Oatmeal Cinn Chip

As I have mentioned before, I love a good oatmeal cookie.  When you add in cinnamon chips….YUM!  A great variation on the basic oatmeal cookie.  I actually just followed the recipe on the back of the Hershey’s Cinnamon Chips bag, and they were fabulous!  Give them a try.

Makes about 40-46 cookies for less than $5.00



1 cup butter, softened – ($1.00)

1 cup brown sugar

1 cup granulated sugar

2 eggs – ($0.20)

1 1/2 tsp. vanilla

1 1/2 cups flour

1 tsp. baking soda

2 1/2 cups oats

1 pkg. Cinnamon chips – ($2.86)

3/4 cup raisins (I omitted these)



Preheat oven to 350 degrees.  Beat butter and sugars in a large bowl until creamy.


Add eggs and vanilla, beat well.


Combine flour and baking soda; add to butter mixture, beating well.


Stir in oats, cinnamon chips and raisins.  Batter will be stiff.



Drop by heaping teaspoons onto ungreased cookie sheet.  Bake 10-12 minutes or until lightly browned.  Cool 1 minute; and move to wire rack to cool.
