Roasted Potatoes, Sausage and Peppers

I found this recipe over at www.lilasapron.com.  It is fabulous, and easy to adapt to your own families likes and dislikes.  This recipe is how I made it, and it serves about 4-6.  You could also add other veggies, like brussel sprouts, mushrooms, tomatoes, squash, etc, whatever you like to eat roasted.  It’s a quick and healthy dish, I am sure your whole family will love.  If you don’t like it too spicy, don’t add the creole seasoning, or just add a 1/2 tsp.

Serves 4-6 for about $1.00/serving

INGREDIENTS:

1 kielbasa sausage, sliced in coins

4-5 red potatoes, cubed

1-2 bell peppers, sliced

1 med. onion sliced

3 Tbsp. Olive oil

1 1/2 tsp. Creole seasoning

2 tsp. dried rosemary

salt and pepper, to taste

DIRECTIONS:

Grease a large baking sheet.  Be sure to use one with a lip, or even use a roasting pan.  Place all ingredients on sheet, including oil and seasonings, and toss with hands to coat.

Bake at 400 degrees for about 35-40 minutes, or until potatoes are tender.
