Parmesan Basil Orzo


We enjoy rice in our house, and very often rice a roni.  I found this recipe, and had to give it a try.  Yum!  This is a great alternative to rice, and much better for you than a box of rice a roni.  It is a quick and easy side to accompany a meal, and could easily be transformed into a main dish by adding some sausage or chicken, and a veggie.

Serves 4-6 for about $0.48/serving



2 Tbsp. Butter – ($0.12)

1 1/2 cups orzo – ($0.98)

3 cups chicken broth – ($1.02)

1/2 tsp garlic powder

3/4 cup grated parmesan cheese – ($0.80)

2 Tbsp chopped fresh basil





In a large skillet, combine butter and orzo.  Sauté over medium heat until orzo is golden brown, stirring frequently.


Slowly stir in the broth and bring to a boil.  Cover and reduce heat to low.  Simmer 20 minutes or until orzo is tender and almost all the broth has been absorbed.


Remove from the heat, stir in the basil and Parmesan and salt and pepper to taste.
