No Peek Beef Tips

I sometimes have a tough time cooking beef cuts, other than ground beef or a roast in the crock pot, as it always tends to end up being too dry or too tough. When I found this recipe, it sounded great, didn’t go in the crock pot, and looked really easy.  Sure en0ugh, it was super easy, and super yummy!  An instant family favorite.  The beef is very tender, even the next day as leftovers heated up in the microwave.  You just have to make this on a day you will be home for a few hours before dinner, as it takes three hours to cook.  You can prep it ahead of time, and throw it in the oven a few hours before you want to eat, but it also only takes about 5 minutes to prep, so you can do it just before you want to cook it as well.  We like to eat this over mashed potatoes as it makes a nice gravy when it is all cooked.

Serves 6 for about $1.28/serving

INGREDIENTS:

2 lb beef tips, stew meat, or chuck roast; cubed – ($5.98)

1 can cream of mushroom soup – ($0.85)

1 packet brown gravy mix – ($0.44)

1 packet onion soup mix – ($0.43)

1 cup water

Put meat in casserole dish.

Mix together all other ingredients and pour over meat.  It doesn’t look all that appealing, but it tastes SO good…

Cover with foil and bake at 300 degrees for 3 hours…no peeking!
