One Pot Andouille Sausage Skillet


This recipe was tasty, and not quite as spicy as the Spicy Sausage Pasta Skillet I have made in the past, so the kids enjoyed it a bit more.  I also used a Kielbasa sausage instead of the Andouille, among a few other changes, but if it were just me, I would have gone spicy all the way!  I love these one pot meals, especially when the days are crazy, as it only takes about 20-30 minutes to prepare and make.

Serves 4-6 for about $0.85/serving

1 tablespoon olive oil

2 cloves garlic, minced

1 onion, diced – $0.33

1 (12.8-ounce) package smoked andouille sausage, thinly sliced (I used Kielbasa) – $2.89

2 cups chicken broth – $0.58

1 (14.5-ounce) can diced tomatoes – $0.48

1/2 cup milk

8 ounces elbows pasta (I used Diatilini) – $0.49

Kosher salt and freshly ground black pepper, to taste

1 cup shredded jack cheese

Heat olive oil in a large skillet over medium high heat. Add garlic, onion and sausage, and cook, stirring frequently, until sausage is lightly browned, about 3-4 minutes.

Stir in chicken brown, tomatoes, milk and pasta; season with salt and pepper, to taste.

Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 12-14 minutes.

Remove from heat and top with cheese.  Place in the broiler for about 5  minutes, until cheese is browned and bubbly.
