Quinoa Soup – Crock Pot


My brother is a fantastic cook.  He is living with us for a bit, and has all sorts of tasty treats to help me make.  Kind of nice to have someone else come up with what to eat, and not just me all the time!!  I have had this soup he has created before, but it has been a few years, but now I have the recipe too!  It’s kind of like a Minestrone meets a Kielbasa Soup.  So good.  Lots of flavor and a bit of spice…but not too much, so the kids would eat it too!  Perfect for the unseasonably cold days we are still having.

Serves 8-10 for about $0.90/serving

Kielbasa sausage – ($2.89)

1 large onion, diced – ($0.38)

3 cloves garlic, minced

1 can green beans or a couple small zucchini chopped – ($0.48)

2 carrots, peeled and diced – ($0.10)

2 stalks celery, diced – ($0.25)

1/4 cup paprika

Salt and pepper to taste

6 cups beef broth – ($1.62)

1 28 0z. can diced tomatoes – ($1.98)

spinach flakes or parsley

1 cup Quinoa, uncooked – ($1.13)

Add tomatoes and broth to crock pot.

 Cook up onions with a little pepper in saucepan until transparent.

Dice up kielbasa and cook in pan until browned.  Add to crock pot.

Cook carrots and celery in pan for a few minutes.

Add in garlic, and cook for a minute or two more.  Add to crock pot.

Add seasonings and spinach flakes to taste and preference.

Cook on high for 4 hours, then low for 1.  Add green beans during last hour on low.

Cook Quinoa according to package directions and add to soup when time is completed.  Serve with some crusty bread.
