Rice a Roni Salad

A great friend of mine often made this salad, and would specifically make it for me when I would return home from college.  It is so yummy, and so easy!  You can make it into a complete dish, by adding some cooked chicken…a perfect, cold summer time dish.  Always a hit at BBQ’s and potlucks…give it a go!

Serves 8-10 for about $0.45/serving

INGREDIENTS:

1 box chicken flavored rice a roni; cooked and cooled – ($0.76)

1 jar marinated artichoke hearts, chopped (reserve juice for dressing) – ($1.08)

2 green onions, sliced – ($0.16)

1/2 red bell pepper, diced fine – ($0.44)

1/2 green bell pepper, diced fine – ($0.34)

1 can olives, sliced – (I completely forgot to add these, but it still tastes great!) – ($0.88)

2 stalks celery, sliced – ($0.38)

DIRECTIONS:

Mix all ingredients together, and chill.
