Sausage and Potato Skillet

This is another super simple, budget friendly and delicious dish!  I found this recipe, and adapted it to what I had on hand, as well as to what seasonings we like in our home.  It was super easy to prep, and everyone enjoyed it…and who doesn’t like potatoes!  This is a true comfort food dish, but something you could eat any night of the week.

Serves 4-6 for about $0.75/serving

INGREDIENTS:

1 – kielbasa sausage, sliced – ($2.68)

2 lb red potatoes, cleaned and sliced thin – ($.99)

1/2 onion, diced small – ($0.15)

1 Tbsp. oil

1 1/2 tsp. sage

1 clove garlic, minced

DIRECTIONS:

In a large skillet, heat oil over medium high heat.  Add in sliced potatoes.  Lay them flat, and cook in batches so that all potatoes get a nice golden brown color on each side.

This takes about 15-20 minutes, depending on how thin, and how large your potato slices are.  After they are all browned, but all back into pan.

Reduce heat to medium and add sausage and onions, and seasonings, and cook for an additional 5-10 minutes, or until onions are soft.
