Seasoned Roasted Potato Halves


These potatoes turned out excellent!!  I have always enjoyed baked potatoes with all the fixins, but these potato halves have plenty of flavor, and are cooked all the way through, and could easily replace baked potatoes for me. You know how sometimes you eat a baked potato, and then end up with dry bits at the bottom, that didn’t get any of the butter, cheese, chives, etc?  Well these solve that problem.  The way they are cut, you get flavor in every bite!  Make as many as you need, for cheap, because potatoes are a pretty darn inexpensive side dish.

Potatoes, partially baked
Seasoned salt
onion powder
Parmesan cheese (optional)

Cut potatoes in half lengthwise and place on lined cookie sheet.

Then cut into squares, but only down to the skin.

Melt butter, and add desired amount of seasonings.

Mix together and brush on potatoes.

Sprinkle with Parmesan if desired.
Place in oven on an aluminum foil-lined pan and broil (on low) for 10-15 minutes.
