Soft and Chewy Gingersnap Cookies

This is one of those cookies that our whole family LOVES!  When I say whole family, I mean cousins, aunts, uncles, grandparents, etc.  These are soft and chewy, not like other hard gingersnap cookies.  These are typically a cookie I relate to Fall and the holidays, but we were recently at a family reunion, and these are my Papa’s favorite, so I thought I would make him some.  They were a hit with everyone!  These are also really easy to freeze, so make a batch, and save some for later.  In our case, we made quite a few, and rationed them out over the weekend.

Makes about 40 cookies for less than $2.00

INGREDIENTS:

3/4 cup shortening

1 cup sugar

1/4 cup molasses

1 egg

2 cups flour

1/2 tsp. salt

3 tsp. baking soda

1 tsp. cinnamon

1 tsp. ground cloves

sugar for rolling cookies

Mix all ingredients together well.

Form into 1 inch balls and roll in sugar.  Place on cookie sheet and flatten slightly.  Sprinkle with sugar.  Bake at 325 degrees for 8-10 minutes; they won’t look done.
