Spicy Sausage Pasta Skillet


If you enjoy eating pasta, this is a go to for any night of the week.  With minimal time spent in the kitchen, you end up with a yummy and satisfying, restaurant quality pasta dish.  I found this recipe over at a Bitchin’ Kitchen, but I have adapted it to fit with what we had on hand.  After eating it, my husband said it was a keeper and that we need to add it to our meal rotation.  I agreed, it was really good, but maybe a bit too spicy for the kids, so some further adjustments could be made to suit the tastes of your family.  With a salad and a side of bread, this makes a great complete meal!

Serves 8 for about $0.95/serving



1 Tbsp olive oil

1 14-ounce package smoked turkey sausage, sliced into coins – ($2.28)

1 medium onion, diced – ($0.33)

2 cloves garlic, minced – ($0.10)

2 cups chicken broth – ($0.45)

1 10-ounce can Ro-Tel – ($0.79)

1/2 cup heavy cream – ($0.79)

8 ounces uncooked penne pasta (about 2 1/2 cups) – I used Rigatoni – ($1.28)

1/2 tsp. black pepper

1 1/2 cups Monterey Jack cheese, shredded – I used mozzarella, as that is what I had – ($1.34)

Scallions, thinly sliced- I just sprinkled dried chives on top



Heat oil over medium-high heat in an oven-safe skillet.  Add the sausage and onion, and cook until sausage is lightly browned and onion is transparent, about 10 minutes. Add in the garlic, and cook for 30 seconds more.


Add the chicken broth, Ro-Tel, heavy cream, uncooked pasta, and pepper, and give the mixture a good stir. Bring to a boil, cover the skillet, and reduce heat to medium low, simmer until the pasta is tender, about 15 minutes, stirring once or twice while cooking.  Preheat the broiler while the pasta is cooking.


Remove the skillet from the heat, and stir in 1 cup of the cheese. Top with the scallions and remaining cheese.


Broil until the cheese is melted and lightly browned – about 3 minutes.
