Strawberry Banana Muffins


My Mom gave me a Muffin Cookbook a while back called, Favorite Brand Name Muffin Collection.  In it are all sorts of sweet and savory muffin treats!  One of our favorites is the fresh strawberry muffin, but we like to add 1 ripe mashed banana to them as well.  So tasty!

Makes about 12-16 muffins for less than $3.00



1 1/4 cups flour

2 1/2 tsp. baking powder

1/2 tsp. salt

1 cup rolled oats

1/2 cup sugar

1 cup milk

1/2 cup butter, melted

1 egg, beaten

1 tsp. vanilla

1 cup chopped strawberries

1 ripe banana, mashed (optional)



Preheat oven to 425 degrees.  Grease 12 muffin cups (when I made it, it made about 16 muffins instead of 12).  Combine flour, baking powder and salt in large bowl; stir in oats and sugar.

Combine milk, butter, egg and vanilla in small bowl; stir into flour mixture just until moistened.


Fold in strawberries and banana.


Spoon into prepared muffin cups, filling about 2/3 full.  Bake 15-18 minutes or until lightly browned and tooth pick comes out clean.


Remove from pan to wire rack after cooling for about 3 minutes.
