Sweet and Sour Chicken


We all love this dish!  I actually got it from my sister in law, who makes it gluten free, as she has Celiac Disease.  I just use flour instead of cornstarch to dredge the chicken, but this is a great dish for those with a gluten intolerance.  It is pretty simple, and has a lot of flavor.  I do double the sauce, as my husband likes things with extra sauce, but this is the original recipe that I got.  Adjust to what works for you and your family.

Serves 4-6 for about $1.18/serving



4 boneless, skinless chicken breasts or thighs – ($3-4)

1 egg, beaten ($0.10)



3/4 cup sugar

1/3 cup white vinegar

1/2 tsp. garlic powder

4 Tbsp. ketchup

1 Tbsp. soy sauce

1 can pineapple chunks, drained ($.89)




Cut chicken into strips.  Warm a few Tbsp. oil in a large skillet.  Dip chicken in beaten egg and then into flour.  Brown in pan on both sides until golden.



Make sauce while chicken is browning.



Add sauce when chicken is browned, and simmer until chicken is cooked through.  Add pineapple chunks, and heat through.  Serve over plain steamed rice, or check back here tomorrow for a great Chinese Rice recipe!

We like to eat this chicken with Chinese Rice, a fruit of some sort, as well as egg rolls, or potstickers, when we are needing our Chinese Food fix!
