Taco Salad


Another favorite growing up, was my Mom’s Taco salad.  It was one of the few times we got to eat Nacho Cheese Doritos, as we typically didn’t eat too many processed/convenience foods growing up.  This was one of the special treats…or tricks to get us to eat salads and kidney beans!  Either way, it worked, and I continue to make this salad for my family. 

Doritos are still one of those treats for a special occasion., and camping is one of those occasions.  We went camping over the Memorial Day Holiday Weekend with some of our friends.  We surprisingly didn’t break into the bag of Doritos we had taken with us, so when we came home, this Taco Salad is what we had for dinner.  It was something quick and easy to eat after cleaning up all the camping gear and doing what seemed like 10 loads of laundry!!  All I had to quickly cook up was some ground beef, prep some veggies, and dinner was


Serves 6-8 for about $1.20/ serving



Spring mix or spinach leaves – ($1.98)

1/2 can olives, sliced – ($0.29)

1 can kidney beans, drained – ($0.68)

1 can corn, drained – ($0.33)

2 stalks of celery, diced

4 – 1/4″ slices of cheese, cubed

1 lb. ground beef, browned and seasoned to preference – ($2.98)

1 bag nacho cheese Doritos – ($2.48)

Dressing of choice



Brown beef in a medium skillet.  I like to season it with just a little garlic, salt, pepper, and cumin.  You can always make it into taco meat by adding taco seasoning…whichever you prefer…my Mom would often just brown the beef as is.


While meat is browning, prep all of your ingredients and place in bowls.

When meat is cooked, start making your salad to your liking!  Crush a handful of Doritos on top of your salad, and add your dressing.
