Taco Soup

I have seen many different recipes floating around for taco soup, but my Mom’s is still my favorite.  Lots of flavor, quick, simple and easy to make…add you can put it in the crock pot too!  You can adjust as you like as well…I add 1 can of corn and swap out one of the cans of chili beans for black beans.

Serves 8-10 for about $0.75/serving

1 lb. ground beef – ($2.68)

1 onion, diced – ($0.33)

3 cans chili beans, un-drained – ($2.04)

1 can diced tomatoes, un-drained – ($0.89)

1 can corn, un-drained – ($0.48)

1 (8 oz) can tomato sauce – ($0.28)

1 pkg. taco seasoning  (or 1 batch DIY Taco seasoning)

1 1/2 cups water

Cheese for garnish

Brown beef with onion in skillet on medium heat, drain if needed.

Combine remaining ingredients, and beef, into crock pot.

 Cook on low for 5 hours.

When done, serve with cheese and tortilla chips, possibly some sour cream, avocado or cilantro too!  Whatever you like on your taco soup.

You can also cook beef in large soup pot.  When browned add remaining ingredients and bring to a boil.  Simmer on med-low for 30 minutes, stirring occasionally.
