Tater Tot Casserole

Another favorite that my Mom often made for us growing up, was a cheesy tater tot casserole.  She would make it different ways, sometimes as a side dish, and sometimes as a main dish with cooked ground beef and green beans on the bottom.  Either way it was prepared, it was good.  I made it myself when I was in college, and it became a hit with friends as well.  A great side for a BBQ, or even leftovers for breakfast!  I actually have a few college friends that make it themselves nowadays…after years of telling them how easy it was, and that I didn’t always need to be around to make it for them 🙂 ! If you like cheese and potatoes, you will like this dish.

Serves 6-8 for about $0.50/serving

1 bag tater tots – ($1.34)

2 cans cream of chicken soup – (or cream of mushroom or celery, whatever you have or like) – ($1.72)

1 can worth of milk – ($0.16)

1/2 cup dried spinach flakes (optional)

1 cup shredded cheddar cheese – ($0.50)

Empty bag of tots in a casserole dish.

Pour over tots.

Be sure all tots are well covered with sauce.

Sprinkle cheese over tots.

Bake at 350 degrees for about 90 minutes, or until browned and bubbly.
