Uncle Bob’s Strawberry Pie

My Uncle Bob makes the BEST strawberry pie!  I have a tough time replicating it, but I do try.  Either way, even if it doesn’t look great when I cut a slice, it sure tastes good!!  I personally don’t care for pie crust, unless it is a graham cracker crust, so that is usually what I use, so spreading the cream cheese does not always turn out well, but it still tastes excellent.  With Spring FINALLY here, it is fun to have all these yummy flavors of the season to come.

Makes a 9 inch pie for less than $5.00

INGREDIENTS:

1 baked pie shell – $1-2

6 cups strawberries – $1.98

1 cup sugar

3 Tbsp. cornstarch

1/2 cup water

1 pkg. cream cheese – $0.89

Red food coloring (optional)

DIRECTIONS:

Mash enough berries to make 1 cup.

Stir together sugar and cornstarch in small pot.

Gradually stir in water and crushed berries.

Cook over medium heat, stirring constantly until mixture thickens and boils.  Boil and stir 1 minute.  Add food coloring; cool.

Beat cream cheese until smooth.

Spread on bottom of pie shell (I like to use graham cracker crust, but cream cheese doesn’t spread very well, so not so pretty, but still tastes good!!).

Fill shell with remaining berries.

Pour berry mixture over top.  Chill at least 3 hours.

  1. Many thanks to you and your Uncle Bob for this recipe. It looks scrumptious! One question: You add no sugar to the cream cheese layer and it’s still plenty sweet enough? Don’t get me wrong. I want to taste the berries not the sugar… just want to make sure. 😉

  2. Thanks Jackie, it’s one of my favorites!! Nope, no sugar in the cream cheese, as there is plenty in the berry sauce that you pour over the whole strawberries. Hope you enjoy!!
