Waikiki Meatballs

Another kid friendly and family favorite dish are these yummy Hawaiian tasting meatballs.  With ginger and garlic in the meatballs, as well as the pineapple in the sauce, it reminds me of Hawaii!  We like to eat these over rice, and add a salad or steamed broccoli.  In addition, I also add spinach flakes and dried red bell pepper to the meatballs to add a bit more color, and a few more nutrients.

Serves 6 for about $0.75/serving

INGREDIENTS:

1 lb. ground beef – ($2.89)

2/3 cup cracker crumbs

1/3 cup minced onion

1 egg – ($0.10)

1 1/2 tsp. salt

1/4 tsp. ginger

1/4 cup milk

1 Tbsp. oil

2 Tbsp. cornstarch

1/2 cup brown sugar

1 can pineapple chunks, drained (reserve juice) – ($1.48)

1/3 cup vinegar

1 Tbsp. soy sauce

Combine beef, crumbs, onion, egg, salt, ginger and milk.

Shape into small meatballs.

Heat oil in large skillet.  Brown and cook meatballs, and then remove.

Mix cornstarch and sugar in a medium sized bowl (especially if you want to double the sauce).  Stir in pineapple juice, vinegar and soy sauce, until smooth.  Pour into skillet and cook over medium heat, stirring constantly until mixture thickens and boils.  Boil and stir for 1 minute.

Add meatballs and pineapple to skillet and coat with sauce.  Heat through.  Serve with steamed rice.
