1. Pumpkin Gingerbread

Pumpkin Gingerbread

Ingredients:

1/2 cup coconut oil, melted
1/2 cup brown sugar
1/4 cup granulated sugar
2 eggs
1/3 cup milk
1 cup pumpkin
1/2 teaspoon ground allspice
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 cup whole wheat flour
3/4 cup organic unbleached all purpose flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt

2. Old fashioned gingerbread

Old fashioned gingerbread

Ingredients:

2 cups flour
1 ½ teaspoon baking soda
½ teaspoon salt
½ cup sugar
1 teaspoon ginger
1 teaspoon cinnamon
½ cup soft butter
¾ cup Crosby’s Fancy Molasses
1 egg
1 cup boiling water

3. Gingerbread Cookies

Gingerbread Cookies

Ingredients:

Gingerbread Cookie Dough:
1 cup salted butter
1/3 cup firmly packed light brown sugar (6 tablespoons)
1 tsp ground ginger
1/2 tsp ground cinnamon
1/8 tsp ground cloves
1/2 tsp vanilla
1/4 tsp baking soda
pinch salt
1 large egg
1/4 cup molasses
1 3/4 cups unbleached, all-purpose flour

for the Glaze:
1 cup powdered sugar
2 tbsp half n’ half (cream or milk)
sprinkles, chocolates or candies for decorating (if desired)

4. Raw Gingerbread Cookies

Raw Gingerbread Cookies

Ingredients:

1 cup dates, packed
1 cup nuts (I used 1/2 cup pecans and 1/2 cup cashews)
2 cups oats (instant or rolled)
2 T fresh ginger, peeled and grated
1 T blackstrap molasses
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 cup candied ginger, chopped (optional but highly recommended!)

Gingerbread Squares

Ingredients:

2 1/2 cups whole-wheat white flour
2/3 cup sugar
2 1/2 teaspoons baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon allspice
1 1/2 cups unsweetened applesauce
1 cup molasses
3 egg whites
light or fat-free whipped topping (optional)
